You’ll be able to do it perfectly every time with a little practice. It’s a bit trickier on a wood stove or a gas burner. On my electric stove, this is achieved by putting it on the burner with the burner set at 5 o’clock – and takes about 10 minutes. If done properly there is a tiny amount of water still left in the bottom reservoir, and the top is filled with black espresso with a caramel sheen. The espresso will boil up the centre spout and spray into your top reservoir. You need to build up pressure in the bottom of the pot so that it forces the water up through the coffee filter. You’ll want to use a high enough heat that the water boils and steams, but not so much that it just steams and escapes. Turn on the stove, just hotter than medium heat.
